Craving. Salty. Sweet. Swine. This gluten free muffin is for you. Yet again, we used our 3-in-1 Muffin Mix to make these gluten free bacon, onion, cheddar muffins. Not only are they great for breakfast, they can also be served as a side for dinner or at picnics. In fact, they were a hit at my Thanksgiving Feast.

Preheat oven to 350 degrees.
Prepare pans.
Cook bacon slices, cool and chop into small pieces.
Caramelize the diced onion. I prefer the sweetness this brings, but you can cook the onion until soft to simplify the recipe.

Put dry mix in a large mixing bowl and add any additional spices you want to use.
Separately, mix together the oil, eggs and milk. Add to dry ingredients and mix well.
Stir in the chopped bacon, grated cheese and caramelized onions.
Fill pans about 3/4 full and bake 15-20 minutes or until springy to the touch.
If you want to boost the overall effect, add 1/4 tsp. cayenne, 1/4 tsp. mustard powder and 1/4 tsp. black pepper to the dry mix.
