I like to make my mornings a little more interesting and have a muffin that zings! This delicious, gluten free cranberry orange muffin is yet another variation that uses our Cheatin' Wheat 3-in-1 Muffin Mix.
Prep time: 10 minutes | Cooking time: 20 minutes | Total time: 30 minutes |
Preheat oven to 350 degree.
Prepare pans.
Put dry mix in a large mixing bowl.
Separately, mix together the oil, eggs, buttermilk, orange zest, chopped cranberries and vanilla. Add to dry ingredients and mix well.
Fill pans about 3/4 full and bake 15-20 minutes or until springy to the touch.
For yet another twist, add 2 tsp. finely chopped rosemary. It just makes it that much more special.
