Silly name, seriously delicious dessert. The name Banoffee is a portmanteau, constructed from the words "banana" and "toffee". Once you know that, it is obvious what ingredients make up this gluten free tart. You have to use a fully baked gluten free crust, but then this dessert is a no-bake, no-fuss, easy to assemble treat. Spread the dulce de leche in an even layer over the cooked gluten free crust.
Slice the bananas and arrange in concentric circles, covering all of the dulce de leche. I overlap the pieces slightly.
Whip the cream, vanilla and sugar to medium peaks and spread over the sliced bananas.
Garnish with shaved chocolate if desired.
If you don't have time to make traditional gluten free pie dough for the crust, throw together a gluten free cookie crust. Use gluten free graham crackers, shortbread cookies, etc.
